Homemade Turtles

Ingredients

  • 1 can Eagle Brand Condensed milk
  • 1 cup butter or margarine
  • 2-1/2 cups demarara brown sugar
  • 1 cup light corn syrup
  • 1 teaspoon pure vanilla extract
  • 2 cup pecan halves,toasted
  • 1 large package semisweet chocolate chips

Instructions

In heavy 3 qt. saucepan melt the 1 cup butter or margarine, add brown sugar and stir thoroughly. Stir in corn syrup, gradually add condensed milk stirring constantly. Continue cooking until all sugar dissolves and mixture comes to a boil. Continue cooking to 235 or 236 degrees on candy thermometer. Remove from heat and stir in vanilla. Caramel should be slightly sticky. Cool and refrigerate. Toast pecans in oven for 15 or 20 min. at 300 degrees F. Arrange pecans in spoke fashion to make turtles using four for legs and one for head. Drop teaspoon of caramel mixture on top of pecans, chill. Melt chocolate in microwave a small amount at a time, dip turtles in chocolate and chill.
