Fool's Butter Toffee

Fool's Butter Toffee is a fast and easy recipe for toffee that doesn't require a candy thermometer and only uses 5 ingredients. This version is made with saltine crackers, milk chocolate chips and your choice of pecans, walnuts or almonds. Since this is one of the easiest recipes for toffee we've found, it's a great way to make homemade toffee to be used in other recipes. You can also divide Fool's Butter Toffee into gift bags for a great party favor or hostess gift.

Ingredients

  • 1 cup butter
  • 1 cup dark brown sugar, packed
  • 36 saltine crackers
  • 1 (11.5-ounce) bag milk chocolate chips
  • 1/2 cup chopped pecans, walnuts or almonds

Instructions

  1. Preheat oven to 375 degrees F.
     
  2. In a small saucepan over medium-high heat, blend butter and brown sugar. Heat to boiling and boil for 4 minutes.
     
  3. Cover 10x15 jellyroll pan with foil and butter lightly.
     
  4. Place a single layer of saltines on the foil, close together.
     
  5. Pour butter mixture over crackers, spreading evenly. Bake for 5 minutes.
     
  6. Immediately sprinkle chocolate chips on top. Allow to soften and spread evenly over cooked crackers. Sprinkle with nuts.
     
  7. Refrigerate until cool. Break into pieces and store in a tin container in refrigerator. Will keep refrigerated for up to 2 weeks.
