E z Fudge

Ingredients

  • 4 squares unsweetened chocolate
  • 1 1/2 cup milk
  • 4 cup sugar
  • 1/8 tsp salt
  • 1/4 cup butter
  • 2 tsp vanilla extract
  • 1 cup chopped nuts

Instructions

Butter an 8" square pan. Melt chocolate in milk over low heat until smooth and slightly thick. Add sugar and salt: increase heat to med and stir until dissolved and begins to boil. Continue to boil to soft-ball stage (234F). Remove from heat and add butter and vanilla. DO NOT STIR. Cool to 110F. If you are adding nuts, do so. Beat until it loses it's gloss and holds it's shape (you can use an electric mixer, but you must use it on low and be extremely careful not to overbeat or it will become grainy. I use a plain old wooden spoon) Pour into pan and cool completely; cut into squares
