Ingredients

  • 2 2/3 cup sugar
  • 2/3 cup light Karo syrup
  • 1/2 cup water
  • 2 eggs whites , stiffly beaten
  • 1 tsp vanilla
  • 2/3 cup broken nuts (optional)

Instructions

Mix sugar, syrup and water in a heavy saucepan. Stir over low heat until sugar dissolves. Cook without stirring to 260 (hard ball stage). Remove from heat and pour, beating constantly, in a fine steam into the beaten egg whites. Add vanilla and continue beating until mixture holds its shape and becomes slightly dull. Fold in nuts. Drop quickly from a buttered spoon onto waxed paper into individual peaks or spread in a buttered pan and cut into 1 inch squares.
