Pouding au Chomeur Poor Man's Cake

Poor Man's Cake is sometimes referred to as Depression Cake. It's an old-fashioned dessert that was particularly popular during the 1930s and is just as delicious and budget-friendly today.

Ingredients

  • 2 cup flour
  • 3/4 cup sugar
  • 4 teaspoon baking powder
  • 4 tablespoon melted shortening
  • 1/2 teaspoon salt
  • 2 cup brown sugar
  • 2 cup water
  • 1 tablespoon flour
  • 1/2 teaspoon maple extract

Instructions

  1. Preheat oven to 350F degrees.
     
  2. Mix together flour, sugar, baking powder, melted shortening and salt In a saucepan.
     
  3. In a separate saucepan, combine the brown sugar, water, 1 tablespoon of flour and maple extract. Bring to a boil, cook slowly 2 minutes.
     
  4. Pour the brown sugar mixture into a glass 9x13-inch pan.
     
  5. Add the flour mixture by the spoonful into the syrup and bake until nice and golden.
     
  6. Serve hot by big spoonfuls and dribble a little sauce over it.
