Pioneer Sheep Wagon Cake

A traditional cake recipe that has withstood the test of time, Pioneer Sheep Wagon Cake is a wonderful trip down memory lane. Bearing an unusual name, this cake recipe was carried across the country in covered wagons and shared with friends and family. A wonderful take on carrot cake, it is made with raisins, cinnamon, nutmeg and ground cloves for a flavor that is great year round. Take a bite out of nostalgia with this delicious cake recipe.

Ingredients

  • 1 1/3 cup sugar
  • 1 1/3 cup water
  • 1 1/3 cup finely grated carrots
  • 1 cup raisins
  • 1 tablespoon butter
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ground clove
  • 1 cup chopped pecans
  • 1/2 teaspoon salt
  • 2 1/2 cup sifted flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 2 teaspoon baking powder

Instructions

  1. Preheat oven to 275 degrees F.
     
  2. In mid sized sauce pan, put sugar, water, carrots, raisins, butter and spices, bring to boil turn down and simmer five minutes. Set aside. (Some people let mixture sit for 12 hours to produce a better flavor. This is optional, but does produce a better cake.)
     
  3. Then add the baking soda mixing to dissolve, add the flour, salt and baking powder. Lastly fold in the pecans.
     
  4. Put the batter into two well greased loaf pans or 1 tube pan. I used a 8 1/2 x 4 x 2 1/2.
     
  5. Bake 275 for 1 hour and  45 minutes of for 2 hours depending on the oven.
