Pineapple Upsidedown Cake Mix Cake

Pineapple Upsidedown Cake Mix Cake is the shortcut way to make this classic dessert. Made with boxed cake mix, pineapple, maraschino cherries, and kiwi, this recipe gives you a unique and quick way to whip up this vintage cake. This is a great cake to bring with you to a potluck or party and won't take terribly long to make. Be forwarned that this cake is quite sweet, but if you're someone who thinks, "the sweeter, the better" when it comes to desserts, then this is definitely the cake for you! Grandma made it first, Mama made it your favorite, and now you can make it whenever you want with this easy recipe.

Ingredients

  • 1 box yellow cake mix, prepared
  • 1 stick butter
  • 2 cup brown sugar
  • 1 can pineapple chunks, drained
  • 10 maraschino cherries
  • 1 can mandarin oranges, drained
  • 1 kiwi, peeled and sliced thin

Instructions

  1. Preheat oven to 375 degrees F. Prepare the cake batter according to package directions. Set aside.

  2. Place butter in 9x13-inch baking dish. Place dish in the oven and melt butter. Carefully remove the dish from the oven and add brown sugar evenly over the melted butter.

  3. Sprinkle pineapple chunks, cherries, oranges and kiwis evenly over the brown sugar mixture.

  4. Gently pour cake batter over the top of the fruit, spread evenly.

  5. Bake 30-35 minutes. Allow cake to cool for 5-7 minutes and then carefully turn out onto a board.  

  6. Serve warm or cold.
