Peanut Butter Coffee Cake

Ingredients

  • 1 1/2 cup packed brown sugar
  • 2 1/2 cup all-purpose flour
  • 3/4 cup Jif creamy peanut butter
  • 2 tablespoon butter, melted
  • 1/4 cup Crisco all-vegetable shortening
  • 2 eggs
  • 2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 cup milk

Instructions

  1. Preheat the oven to 375 degrees F.

  2. Stir 1/2 cup brown sugar, 1/2 cup flour, 1/4 cup peanut butter and the butter in a medium bowl with a fork until the mixture forms coarse crumbs.

  3. Beat the remaining peanut butter and the shortening in a large bowl with an electric mixer on medium-high speed until the mixture is creamy.

  4. Gradually beat in the remaining brown sugar. Add the eggs, one at a time, and beat until the mixture is fluffy.

  5. Stir the remaining flour, the baking powder, salt and baking soda in a medium bowl.

  6. Reduce the speed to low. Slowly add the flour mixture in three parts, alternating with the milk, and beat just until combined.

  7. Spread the batter in a greased 3-quart shallow baking pan. Sprinkle with the crumb mixture.

  8. Bake for 30 minutes or until a knife inserted in the center comes out clean.
