"Lemon Ricotta Cake is gluten free and uses almond meal in place of flour. This is a very easy cake to make and is perfect for hot summer days, brunch or a light dessert. The holidays are upon us and now is the time to make delicious desserts while soaking up the sun! (If you're in the Northern Hemisphere, I guess you are gathering around a fire with hot chocolate).
