Lazy Sunday Cinnamon Roll Cake

This Lazy Sunday Cinnamon Roll Cake is the perfect meal to roll right out of bed for. This is basically (you guessed it) a cinnamon roll in cake form, which is something everyone can get behind if it passes for a breakfast item, right? This easy cake recipe is also delicious served as a dessert or as a sweet little snack with a nice strong cup of coffee. So light and sweet, the cake is perfectly complemented by the milk and honey glaze drizzled over the top. Grab your fork, because this is one cake recipe you are going to want to try!

Ingredients

  • Ingredients for Cake
  • 3 cup flour
  • 1 cup sugar
  • 4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup evaporated milk
  • 1/2 cup water
  • 2 eggs
  • 1 teaspoon vanilla
  • 1/2 cup butter, melted
  • Cinnamon Topping
  • 1 cup softened butter
  • 1 cup brown sugar
  • 1 1/2 teaspoon cinnamon
  • 2 tablespoon flour
  • Glaze
  • 2 cup confectioner’s sugar
  • 5 tablespoon milk or cream
  • 2 tablespoon honey

Instructions

  1. Preheat oven to 350 degrees F. Spray or grease a baking pan.

  2. Mix all dry cake ingredients in a large bowl. In a medium bowl, beat egg with milk, water, and vanilla. Add the melted butter to the dry cake ingredients, and then stir in the egg/milk mixture, mixing until all dry ingredients are incorporated. 

  3. Pour cake batter into prepared pan. Set aside.

  4. In another bowl, beat the topping ingredients until they form a paste.

  5. Drop topping randomly over top of cake batter. Using a spatula, flatten the topping into the top part of the cake batter.

  6. Bake at 350 degrees F for 25-35 minutes, or until a toothpick inserted in the center come out clean. Remove from oven and cool slightly on a rack. 

  7. Mix the glaze ingredients in a small bowl, adding only enough milk or cream to make a thick but pourable glaze.

  8. Drizzle glaze over cake and let it set about 15 minutes.
