Date Nut Roll

Ingredients

  • 1 c. flour, unsifted
  • 3 eggs
  • 1 c. dates, chopped
  • 3/4 c. nuts
  • 1/4 c. sugar
  • 1/2 c. sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon allspice

Instructions

Combine chopped dates, 1/4 cup sugar, 1 cup water and 1/2 teaspoon salt. Cook 4 minutes. Set aside to cool. Beat eggs 5 minutes on high. Add 1/2 cup sugar to eggs. Sift flour, baking powder and allspice. Add to egg mixture. Next, add cooked and cooled date to mixture to egg batter. Pour into jelly roll pan. Bake 15 minutes at 350 degrees. Turn onto towel sprinkled with powdered sugar. Roll up and cool. Filling 2 (3 oz.) pkg. cream cheese 4 Tbsp. oleo 1/2 tsp. vanilla 1 c. confectioners sugar Cream all ingredients until smooth. Spread on unrolled cake and reroll.
