Carrot Cake for a Crowd

Ingredients

  • 1 pound freshly grated carrots
  • 4 large eggs
  • 2 cup sugar
  • 3 cup all purpose flour
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 2 tsp baking soda
  • 2 tsp cinnamon
  • 1/2 cup chopped walnuts
  • 1 1/2 cup oil
  • 8 ounce pkg of cream cheese
  • 1 box 10X sugar
  • 4 ounce unsalted butter
  • 2 tsp real vanilla

Instructions

Preheat oven to 325. Add 1 egg at a time to the grated carrots until all have been added. Beat after each egg. Add the oil and mix. Sift all of the dry ingredients together and add it to the oil, egg, and carrot mixture in 4 parts. Beat after each addition. Add the walnuts and mix well. Pour into a greased/floured tube pan. Bake for 1 hour at 325F or when a toothpick inserted into the cake comes out clean. Soften butter and cheese. Blend well and then add the sugar and vanilla. Beat until smooth and creamy. Frost only after cake is cooled.
