Blueberries and Cheese Coffeecake

Ingredients

  • 1/2 cup margarine
  • 1 1/4 cup sugar
  • 2 eggs
  • 2 1/4 cup flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt (optional)
  • 3/4 cup milk
  • 1/4 cup water
  • 2 cup blueberries
  • 1 package (8-ounce) cream cheese, cubed
  • 1 teaspoon grated lemon peel

Instructions

Cake Directions:

  1. Preheat oven to 375 degrees F.
     
  2. Beat margarine and sugar until light and fluffy.
     
  3. Add eggs, one at a time, mixing well after each addition.
     
  4. Add combined 2 cups flour, baking powder and salt alternately with combined milk and water, mixing well after each addition.
     
  5. Toss blueberries with remaining flour; fold into batter with cream cheese and peel.
     
  6. Pour into greased and floured 13 x 9 baking pan.

Topping Directions:

  1. Combine 1/4 cup of sugar, 1/4 cup of flour and 1 teaspoon of lemon peel; cut in 2 tablespoons of margarine until mixture resembles coarse crumbs.
     
  2. Sprinkle topping over batter. Bake at 375 degrees F for 1 hour. Let Cool.
     
  3. Sprinkle with powdered sugar before serving.
