Banana Streusel Coffee Cake

Are your bananas just too ripe to eat? Don't throw your bananas away, instead use them in this banana streusel coffee cake recipe. You'll know when the cake is done by the sweet smell wafting from the kitchen.

Ingredients

  • 1/2 cup solid vegetable shortening
  • 1 cup sugar
  • 2 eggs
  • 1 cup mashed ripe bananas
  • 1/2 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 2 cup all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 1/2 cup chopped nuts
  • 1/2 cup sugar
  • 1 teaspoon cinnamon

Instructions

  1. Preheat oven to 350 degrees F.
     
  2. Grease 2 (8 inch round) cake pans.
     
  3. Prepare streusel mixture and set aside.
     
  4. In a medium bowl, beat together shortening and sugar until creamy.  Beat in eggs, bananas, vanilla, and fold in sour cream.
     
  5. In a small bowl, combine flour, soda, baking powder, and salt.  Fold into creamed mixture, stirring only enough to blend ingredients.
     
  6. Sprinkle prepared pans with 1/3 of the streusel mixture.
     
  7. Carefully spread 1/2 the batter over the streusel mixture.  Sprinkle with another 1/3 of the streusel mixture.  Spread the remaining batter over the streusel.  Sprinkle the remaining streusel mixture over the top.
     
  8. Bake about 40 minutes or until a wooden pick inserted in the center comes out clean.
     
  9. Cool in pans on a wire rack for 10 minutes, turn out onto serving plates or wire rack.
     
  10. Serve warm or at room temperature.
     
  11. Makes 2 (8-inch round) coffee cakes.

  • 1 1/2 cups chopped nuts
  • 1/2 cup sugar
  • 1 teaspoon cinnamon
