"This Banana Snack Cake is one of those feel-good recipes. It is packed with brown sugar, cinnamon, and, of course, bananas! It is made with basic pantry staples and is very versatile. It's great any time of the day but honestly, my favorite is for breakfast with a cup of coffee. My original recipe did not include a streusel topping and it is great that way too. However, I was looking for more of a breakfast, coffee cake type of treat so adding streusel seemed like the way to go. And, let me tell you, it is a perfect marriage!"

NotesYou can also leave the streusel topping off if desired.

Ingredients

  • 1 cup brown sugar
  • 1 cup butter, softened
  • 2 eggs
  • 2 cup all-purpose flour
  • 3 teaspoon baking soda
  • 3 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup almond or 2% white milk
  • 3 ripe bananas, mashed
  • 1 teaspoon vanilla
  1. Preheat oven to 350 degrees

  2. In a large bowl, mix 1 1/2 cups brown sugar, 1 cup of butter, and eggs until well combined

  3. In a small bowl, combine 2 cups flour, baking soda, baking powder, and salt.

  4. Add the flour mixture to the brown sugar mixture, alternately with the milk.

  5. Add mashed bananas and vanilla, mixing well

  6. Pour into an ungreased 9" x 13" baking pan
