Amish Upside Down Berry Cake

This Amish Upside Down Berry Cake isn't your average, run-of-the-mill upside down cake recipe. Not only does this delicious cake have its roots in the Amish traditional lifestyle, it also features a surprise "secret" ingredient. The addition of miniature marshmallows to this easy berry cake recipe makes this one of the fluffiest, sweetest simple desserts we've ever tasted. Give this classic Amish recipe a try and impress everyone at the table with the perfect dessert to end any meal.

Ingredients

  • 1/2 cup walnuts, chopped
  • 1 cup fresh or frozen blueberries
  • 1 cup fresh or frozen raspberries, halved
  • 1 cup fresh strawberries, sliced
  • 1/4 cup sugar
  • 1 (3-ounce) package raspberry gelatin
  • 1 box yellow cake mix
  • 2 eggs
  • 1 1/4 cup water
  • 2 tablespoon canola oil
  • 1 1/2 cup miniature marshmallows

Instructions

  1. Preheat oven to 350 degrees F.

  2. In a well-greased 13 x 9 baking pan, layer walnuts and berries; sprinkle with sugar and gelatin.

  3. In a large bowl, combine the cake mix, eggs, water, and oil; beat on low speed for 30 seconds. Beat on medium speed for 2 minutes.

  4. Fold in marshmallows and pour over top of mixture in baking pan.

  5. Bake for 35–40 minutes or until toothpick inserted near center comes out clean.

  6. Cool for 5 minutes before inverting onto a serving platter.
