Apple Cake with Frosting
Ingredients
- 1 1/2 cup vegetable oil
- 2 cup sugar
- 3 eggs
- 3 cup flour
- 1 1/2 tsp baking soda
- 1/2 tsp salt
- 1 1/2 tsp cinnamon
- 3 cup chopped apples
- 1 cup pecans
- 1 tsp vanilla
- 1 cup coconut (optional)
Instructions
Beat oil, sugar and eggs together in a bowl. Add rest of ingredients and beat well. Pour into a greased 13x9 inch baking pan and bake at 350 degrees for 55-60 minutes. Frost cake when slightly cooled. FROSTING: 1/2 cup butter 1/2 tsp salt 1 cup firmly packed brown sugar 2 tbs evaporated milk Place in saucepan and heat to melt butter and dissolve sugar. Add confectioner's sugar to mixture to thicken to desired spreading consistency.
