Veggie Egg Boats

These Veggie Egg Boats are incredibly easy and fun to make. Sometimes having eggs for dinner just sounds delicious, doesn't it? If that's the case for you, this is the perfect "breakfast for dinner" recipe. Each egg boat is like having an omelet in a bread bowl. You can also go the more traditional route and make this recipe for breakfast. It's also an excellent brunch menu item. Ingredients

  • 6 French bread rolls
  • 6 eggs
  • 1/4 cup heavy cream
  • 1/4 cup sharp Cheddar cheese
  • 1/4 green bell pepper, diced
  • 1/4 red bell pepper, diced
  • 2 green onions
  • 2 tablespoon Italian parsley, chopped
  • Salt and pepper

Instructions

  1. Preheat oven to 350° F.

  2. Sauté bell peppers to soften and allow to cool.

  3. Cut tops off of each roll and remove some of the bread inside.

  4. In a large mixing bowl, whisk together eggs and cream. Add remaining ingredients and season with salt and pepper.

  5. Carefully pour the mixture onto each roll and place onto a baking sheet.

  6. Bake 20 minutes or until the eggs have puffed up and are lightly golden brown.

  7. Allow to cool slightly and serve.
