Simple Baked Oatmeal

Baked oatmeal is a great way to start the day. It's low in fat, high in fiber and will keep you full throughout the morning so you aren't reaching for snacks.

Ingredients

  • 1 cup milk
  • 2 eggs
  • 1/2 cup oil
  • 1/2 cup brown sugar
  • 2 cup instant flavored oatmeal
  • 1 teaspoon baking powder

Instructions

1. Blend milk, eggs, oil, and brown sugar in blender. Combine with oatmeal and baking powder; allow to sit for 14 minutes.

2. Stir, and pour into a buttered 1-quart baking dish. Bake at 325 degrees for 45 minutes. Serve with hot milk, maple syrup, or vanilla yogurt.
