Paleo Viet Avocado Shake Sinh to Bo Recipe

"This version of the traditional Vietnamese drink is made with coconut milk. My friend was telling about an amazing vietnamese avocado shake and so I had to look it up and make one! Sinh To Bo is a pretty easy, but it is traditionally made with sweetened condensed milk, making it not very Paleo or healthy. My Paleo version of this delicious drink cuts down on the sugar and uses coconut milk instead. I hope you enjoy it!"

NotesSubstitutions: You can also use coconut water as the sweetener in this recipe. In that case, use canned coconut milk and use 1/4 cup canned coconut milk (the creamy stuff) and 1/4 cup coconut water.

Ingredients

  • 1 avocado
  • 1 cup of ice (I used 6 cubes from this large ice tray)
  • 1/2 cup coconut milk (from carton, not can) – add a little bit more if you have trouble getting the mixture to blend
  • 1 Tablespoon raw honey – add more to taste
  1. Cut a ripe avocado in half.

  2. Use a spoon to scoop out the avocado flesh.

  3. Place the avocado flesh into the blender with the ice, coconut milk, and honey, and blend well (start slow and increase the speed slowly).

  4. Add more coconut milk if necessary to blend well until smooth.
