Lemon Blueberry Walnut Muffins

"Whip up this easy one-bowl recipe in minutes and you'll have delicious Lemon Blueberry Walnut Muffins in minutes. Dust with sanding sugar, Turbinado sugar or create a simple lemon glaze to make them even more amazing. Nuts are optional, but if you love the crunch, you won't want to skip them. NotesUse either fresh or frozen blueberries. If you use frozen, they will need a few extra minutes to bake.

Ingredients

  • 1/4 cup lemon juice
  • 1/2 cup milk
  • 1 egg
  • 2 cup flour
  • 1/2 cup sugar
  • 2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup blueberries
  • 3/4 cup walnuts
  • 2 tablespoon lemon zest
  1. Preheat oven to 400 degrees F

  2. Grease a 12 cup muffin tin or line with papers.

  3. Place all the ingredients except the blueberries and sanding sugar in a medium sized bowl.

  4. Stir to combine.

  5. Fold in blueberries gently.

  6. Divide into 12 muffin cups.
