Ingredients

  • 3 tablespoon grape seed oil or any other cooking oil
  • 1 large onion, chopped
  • 1 celery stalk, finely chopped
  • 1 pound cooked, cubed ham
  • 1/4 cup water
  • 1 pound potatoes, cubed
  • 1/2 teaspoon Cayenne pepper
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon kosher salt
  • 1 cup havarti or cheddar cheese
  • 1 fried egg per person

Instructions

  1. Preheat oven to 400 degrees F.

  2. Take 12 inch cast iron or any other heavy bottom oven safe skillet and preheat it on stove top to medium high heat. Add oil, onion, celery and ham and let it caramelize for couple of minutes.

  3. Add water and potatoes. Sprinkle Cayenne pepper, black pepper and kosher salt on top and pop to oven for 30 minutes.

  4. Take out the skillet from the oven, top it with cheese and return to oven for another 15 minutes.

  5. Serve hot with fried egg on top and enjoy!
