Chicken Strata

Ingredients

  • 8 slices of bread, buttered and cubed
  • 6 chicken breasts, cooked and cut-up
  • 1 cup celery, finely chopped
  • 1 onion, diced (optional)
  • 1/2 cup mayonnaise
  • 4 eggs beaten
  • 1 cup chicken broth
  • 2 cup milk
  • 1 can cream of mushroom soup
  • 1/2 teaspoon salt
  • grated cheese
  • paprika

Instructions

Place half of the bread cubes in the bottom of a 9" X 13" pyrex dish. Mix chicken with celery, onion (optional), and mayonnaise. Spread over bread cubes. Cover with remaining bread cubes. Combine eggs, liquid, and salt. (Note: Soup concentrate is not considered a liquid. It will be used in a later step.) Pour over chicken and bread mixture. Cover and refrigerate overnight. Bake casserole at 350 degrees for 15 minutes. Pour undiluted mushroom soup over casserole. Bake 50 additional minutes. At that point, sprinkle top of casserole with grated cheese and paprika and bake 10 additional minutes.
