Blueberry French Toast Bake

"This super easy blueberry French toast bake is a casserole-style dish that’s perfect for making French toast for a group, and it travels well for potlucks and other events. In my family, French toast bakes (or French toast casseroles) are a go-to recipe for parties, and making one of these casseroles is just as easy for a weekend breakfast or brunch at home. I love the tart, fruity flavor that the blueberries add, and you can use your favorite type of bread to mix up the flavor combination as well. I used a thick white bakery-style bread that I find a little sweeter, but I’ve heard it’s also very popular to use sourdough bread."

Ingredients

  • 1/2 loaf thick white bread, about 9 pieces
  • 4 eggs
  • 1 cup milk
  • 1/4 cup heavy cream
  • 1/4 cup sugar
  • 1 tablespoon vanilla extract
  • 1 cup fresh blueberries (more as desired)
  • For the Streusel Topping:
  • 1/4 cup flour
  • 1/4 cup brown sugar
  • 4 tablespoon butter, cold and cubed
  • 1 teaspoon cinnamon

Instructions

  1. Preheat the oven to 350 degrees F and lightly spray a casserole dish with cooking spray.
     

  2. Note: You can use this with various sized dishes, but you may need to adjust the cook time. I used a smaller pan, which resulted in a deeper French toast bake that needed to be baked the full time in order to reach the center.

  3. Cut the bread into equal sized pieces, about 1-inch squares, and add to the greased dish along with fresh blueberries. Toss as needed to evenly distribute.
     

  4. In a mixing bowl or large glass measuring cup, whisk together the eggs, milk, cream, sugar and vanilla extract until smooth. Pour evenly over the bread and set aside while you make the streusel.
     

  5. In a separate bowl, combine the flour, brown sugar, cinnamon, and butter. Use a fork or a pastry knife to cut into the mixture until crumbly. You can also combine all ingredients in a food processor and pulse until crumbly.
     

  6. Sprinkle the streusel evenly over the bread and bake for about 45 minutes (or up to an hour) until the top is lightly crispy. Bake for more than 45 minutes if you prefer a less soft center.
     

  7. Use a large spoon or spatula to serve warm and top with syrup and other toppings for a deliciously easy and sweet breakfast!
