Sugar-Crusted Walnut Zucchini Banana Bread

"Zucchini is in season and readily available through September. Hooray for zucchini muffins and zucchini bread, like our Sugar-Crusted Walnut Zucchini Banana Bread, which is nice and moist and sweetened with brown sugar and ripe bananas with lots of walnuts and a generous sprinkling of sugar for a crunchy top. Now this recipe doesn’t make a skimpy little sweet loaf but a nice big hearty one. Oh, and the sugared walnuts on top, which are a treat in themselves, add so much flavor to this already scrumptious bread!"

NotesYou can use 3 medium mashed overripe bananas in place of the 3 frozen and thawed bananas.

If using frozen bananas check out our frozen banana tip and never mash bananas again for muffins and quick bread recipes!

Use 2 cups lightly packed grated zucchini in place of the 1 cup frozen, thawed and drained zucchini. Because 2 cups grated zucchini after it's frozen, thawed and drained measures 1 cup.
