There's nothing like enjoying a hearty dinner with a homemade roll recipe or popover to go with it. These Poor Man Popovers are good with any type of meal, especially when they are served right out of the oven. Made with a hint of parmesan cheese and thyme, they have a subtle herb flavor that you're going to love. Also, great for parties, serve your guests only the best bread recipes.

Ingredients

  • 1 cup all purpose flour
  • 1 teaspoon salt
  • 2 eggs at room temperature
  • 1 cup whole milk at room temperature
  • 1 tablespoon melted butter
  • 1 tablespoon parmesan cheese
  • 1/2 teaspoon thyme

Instructions

  1. Preheat oven to 400 degrees F.

  2. In blender, blend flour, salt, eggs, whole milk and butter. Blend it for exactly 30 seconds.

  3. Scrape with silicone spatula all of the batter from the top of mixing bowl down and add parmesan and dry thyme.

  4. Blitz 10 pulses to blend.

  5. Immediately pour the batter to the buttered hot cups up to ½ of it’s size and pop to oven for 40 minutes or if you use muffin sheet for 30 minutes. Don’t open the oven during this time.

  6. Remove from the oven and immediately transfer to cooling rack and pierce hole with knife or skewer in the popover.

  7. Serve hot or cool it completely and hold it in airtight container for up to 3 days. To reheat it pop to preheated oven to 400 degrees F for 2-4 minutes.
