  • 1 1/2 cup Crisco
  • 1 1/2 cup brown sugar
  • 6 eggs
  • 3 teaspoon lemon juice
  • 6 tablespoon cold water
  • 4 1/2 cup grated carrots (grate using Cuisinart - do not buy already shredded carrots)
  • 3 cup flour
  • 3 teaspoon baking powder
  • 1 1/2 teaspoon baking soda
  • 1 1/2 teaspoon salt

Instructions

  1. Preheat oven to 325 degrees F.

  2. Lightly grease a large ring-mold.

  3. Cream Crisco and sugar until smooth.

  4. Add eggs, lemon juice, and water, and beat until blended.

  5. Add carrots, flour, baking powder, baking soda, and salt. Mix until combined. Batter will be stiff.

  6. Pour mixture into prepared pan.

  7. Bake in oven for one hour or until toothpick inserted near center comes out clean
