Ingredients

  • 50 gram warm water
  • 1 teaspoon active dry yeast
  • 439 gram bread flour
  • 2 teaspoon kosher salt
  • 283 gram cool water
  • flour, for dusting

Instructions

  1. Combine and stir active dry yeast and warm water. Set aside for 10 minutes

  2. In a large bowl, combine bread flour and salt.

  3. Make a well in the center of the flour mixture, and stir in the dissolved yeast.

  4. Add the cold water and mix until fully incorporated.

  5. Knead the dough for 10 minutes and transfer to a bowl dusted with flour.

  6. Cover with plastic wrap and ferment until it doubles in size, for about 1 hour.

  7. Punch down the dough and divide it into four equal pieces.

  8. Round the dough over and let it rest for 10 minutes.

  9. Shape each piece of dough to a 10-inch cylinder.

  10. Place each rolled dough on a dusted pan.

  11. Let it rest for 30 minutes.

  12. Score several diagonal cuts in each piece of dough.

  13. Bake at 450 degrees Fahrenheit for 20 minutes.

  14. Serve with a spread of butter or cream cheese and a bottle of light white wine.
