Red Wine Braised Short Ribs

If you're looking for an easy dinner recipe to blow your guests away, this is the recipe for you. These braised short ribs are so tender and juicy. Being braised with red wine in a slow cooker really gives these ribs a delicious flavor. You can have this rib recipe ready in just two and a half hours. To add to this dish, try adding some veggies in. Carrots, brussel sprouts, and kale will all add a great flavor and round out your meal. With just the slow cooker and a saucepan used, this meal is also a breeze to clean up.

Ingredients

  • olive oil
  • 6 beef short ribs
  • 1 head garlic
  • 1 tablespoon tomato puree
  • 1 cup red wine
  • 1/2 cup beef stock (optional)
  • 1 large potato, cubed
  • sea salt and freshly ground black pepper
  • chopped flat-leaf parsley

Instructions

  1. Brown the ribs (optional)- In a saucepan, on medium-high heat. Saute onion and garlic for 3-5 minutes. Sear the ribs and brown on each side. Transfer to your VitaClay pot.

  2. Add the rest of ingredients and red wine in your Vitaclay, except garnish.

  3. Cover your slow cooker with lid. Set on "SOUP" to cook for 2.5-3 hours.

  4. When ribs are cooked tender, transfer the rib juice and ribs to a saucepan. On medium-high heat, heat the ribs and its juice until the juice evaporates out to further coat the ribs to brown.

  5. Serve with potato, Brussel sprouts and kale Enjoy!
