Winters Meatloaf

Keep warm and full this season with our delicious Winters Meatloaf. Mixed with fresh vegetables and a pinch of nutmeg this dish creates an exciting new flavor to the basic meatloaf. Good for any holiday, it is a great recipe for meatloaf lovers.

Ingredients

  • 3/4 cup onion minced
  • 3/4 cup green onion, minced
  • 1/2 cup celery, minced
  • 1/4 cup green pepper, minced
  • 1/4 cup red pepper, minced
  • 1 teaspoon salt
  • 1/4 teaspoon cayenne
  • 1 teaspoon black pepper
  • 1/2 teaspoon white pepper
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup half and half
  • 1/2 cup catsup
  • 1 1/2 pound lean ground beef
  • 1/2 pound lean ground pork
  • 3 eggs beaten
  • 3/4 cup bread crumbs

Instructions

  1. Preheat oven at 350 degrees F.
     
  2. Saute the vegetables in butter until soft. Add salt, cayenne, peppers, cumin and nutmeg to the sauteed vegetable mixture.
     
  3. Stir in half and half, catsup, beef, pork, eggs and bread crumbs into the vegetable mixture. Mix well. Form into a loaf on a greased baking dish.
     
  4. Bake at 350 degrees F for 45 to 50 minutes.
