Spicy Ground Beef Stew

"This spicy ground beef stew recipe was inspired by my childhood. I grew up in the 70’s in a very modest family, and sometimes dinner had to be super easy and economical. So sometimes my mom would make this skillet with ground beef, onions and potatoes with a little bit of water until the potatoes were cooked! I’m not really sure if it was something that other families ate, or if it was due to a lack of imagination or simply to save on food costs. I took the base of that recipe, which is the ground beef, onion and potatoes and I built flavour around it. Instead of using water I made a tomato sauce to create a stew. I built the flavour with Sriracha to give it a spicy flare. This dish remains simple, economical but full of flavour!"

Ingredients

  • 2 pound ground beef
  • 4 potatoes (cubed)
  • 1 onion (diced)
  • 2 cloves of garlic (minced)
  • 1 can 28 oz of whole tomatoes
  • 2 tablespoon chilli powder
  • 1 cup beef broth
  • 3 tablespoon Sriracha sauce
  • 3 tablespoon ketchup
  • A pinch of sugar
  1. In a large pan, cook the ground beef until no pink remains (about 8 minutes)

  2. Salt and pepper the meat to taste.

  3. Add in the garlic and cook for 2 minutes.

  4. Add in the onion and cook for 5 minutes.

  5. Add in the tomatoes, beef broth, chilli powder, ketchup, Sriracha sauce, sugar and parsley.

  6. Bring to a gentle boil.
