Sam Newman's Best Beef Burgers

This simple recipe will teach you how to make juicy hamburger patties for you and your friends. Sam Newman's secret recipe is one of the most famous hamburger recipes in his native town of Scranton, Pennsylvania. He always told his friends he would keep the recipe a secret for life, but here it is for you now to try yourself. Enjoy!

Ingredients

  • 1 egg
  • 2 teaspoon water (25 mL)
  • 1/4 cup dry bread crumbs (50 mL)
  • 1 small onion, grated
  • 2 teaspoon Dijon mustard (10 mL)
  • 1/2 teaspoon salt (2 mL)
  • 1/2 teaspoon Worcestershire (2 mL)
  • 1/4 teaspoon pepper (1 mL)
  • 1 pound lean ground beef (500 g)
  • 4 hamburger buns

Instructions

  1. In bowl, beat egg and water with fork; mix in bread crumbs, onion, mustard, salt, Worcestershire and pepper.
     
  2. Mix in beef. Shape into four 1/2-inch (1 cm) thick patties. (Make-ahead: Cover and refrigerate for up to 6 hours. Or layer between waxed paper in airtight container and freeze for up to 1 month; thaw in refrigerator.)
     
  3. Place patties on greased grill over medium-high heat; close lid and cook, turning patties once, for about 10 minutes or until no longer pink inside.
     
  4. Place in hamburger buns. Makes 4 servings.

    Variations:
  • Oregano Lemon Pork Burgers: Omit mustard, Worcestershire sauce and beef. Add 1 tablespoon (15 mL) chopped fresh oregano, 2 teaspoon (10 mL) grated lemon rind and 1 pound (500 g) lean ground pork.
     
  • Cajun Chicken Burgers: Omit mustard, Worcestershire sauce and beef. Add 1/4 cup (50 mL) chopped fresh parsley, 2 teaspoon (10 mL) Cajun seasoning and 1 pound (500 g) ground chicken.
