Nana's Classic Pot Roast

Ingredients

  • 3 pound Swiss Steak
  • 1 tablespoon vegetable oil
  • 1/4 cup soy sauce
  • 1 cup coffee
  • 2 bay leaves, crumbled
  • 1 clove garlic, minced
  • 1/2 teaspoon dried oregano
  • 2 onions, sliced
  • additional soy sauce and coffee, as needed

Instructions

  1. Preheat oven to 300 degrees F. Do not pound or flour meat.
     
  2. Heat oil in heavy skillet over high heat and sear meat on both sides.
     
  3. Meanwhile in large 6 quart roasting pan, combine soy sauce, coffee, garlic, bay leaves and oregano. Pour in bottom of roaster.
     
  4. Layer one sliced onion on top.
     
  5. Transfer browned meat to roaster and layer with remaining sliced onion.
     
  6. Cover and bake for 3 1/2 to 4 hours, basting every hour with pan juices. If liquid boils dry, simply add 1 more cup of coffee and a liberal splash of soy sauce.
     
  7. Cut meat in thin slices and serve.
