Meatballs By Mama Rosa

Of all the Campbells soup recipes I've found, this one, from a family friend named Mama Rosa, is my favorite! It's hearty and creative - a great way to use two different soups - and it smells and tastes wonderful!

Ingredients

  • 1 pound extra lean ground beef
  • 1 slice dry bread, crumbled
  • 1 teaspoon Worcestershire sauce
  • 2 tablespoon milk
  • 1 egg
  • 1 tablespoon oil
  • 1 green pepper, cut in 1/2-inch chunks
  • 1 medium onion, cut in 1/2-inch chunks
  • 1 can Campbell's Tomato soup
  • 1 can Campbell's Chicken with Rice soup
  • 2 can water

Instructions

 

  1. Mix first 5 ingredients in a bowl and shape into meatballs. (Note-if you are not using extra lean ground beef, you should boil themeatballs before adding them to the sauce to remove the excess grease.)
     
  2. Saute the green pepper and onion in the oil for about 3 minutes.
     
  3. Add the soups and water and bring to a simmer.
     
  4. Add the meatballs and cook,uncovered, until the meatballs are done and the sauce thickens.
     
  5. Serve with rice.
