Coffee Beef Stew

I'll bet you never would have imagined a beef stew recipe with coffee in it, but this one is surprisingly good! The coffee adds a richness and balances the sweetness of the dates wonderfully. This is an unusual recipe you've just got to try!

Ingredients

  • 2 1/2 pound beef, cut into 1-inch cubes
  • 1/2 teaspoon salt
  • 1/2 teaspoon coarsely ground pepper
  • 3 cup strong brewed Kona coffee
  • 1 cup water
  • 1 cup finely chopped onion
  • 2/3 cup dry red wine
  • 4 cloves garlic, minced
  • 2 cup peeled and cubed potatoes
  • 1/2 cup sliced mushrooms
  • 1/2 cup whole dates, pitted and chopped
  • 2 tablespoon capers

Instructions

  1. Sprinkle meat cubes with salt and pepper.
     
  2. Heat pan over medium-high heat.
     
  3. Brown beef; add coffee, water, onion, wine, and garlic.  Bring to a boil and cover. 
     
  4. Lower heat and simmer about 45 minutes.
     
  5. Add potatoes, mushrooms, dates and capers.
     
  6. Bring to a boil again.
     
  7. Cover, and reduce heat.
     
  8. Simmer 20-25 minutes. Serve over rice, with bread, or alone.
