Chicken Fried Steak and Gravy

The addition of cornmeal makes this Chicken Fried Steak and Gravy recipe stand out among the rest. If you are a fan of southern recipes, this one will find a spot in your recipe box.

Ingredients

  • 1 round steak, cut 1/2
  • 2 eggs
  • 2 tablespoon water
  • 1 1/3 cup and 2 tablespoons flour
  • 1/3 cup cornmeal
  • 1 1/2 teaspoon salt
  • 3/4 teaspoon pepper (or more)
  • 4 -6 tablespoons vegetable oil

Instructions

  1. Beat eggs and water together.
     
  2. Mix the 1/3 cup flour, cornmeal, 1 teaspoon salt and 1 teaspoon pepper on a piece of wax paper.
     
  3. Put the 1 cup flour on another piece of wax paper.
     
  4. Dip steaks in flour, then in egg mixture, then in cornmeal mixture.
     
  5. Brown meat, 2 pieces at a time, in hot oil on both sides in a large heavy skillet.
     
  6. Return all meat to skillet; lower heat; cover. Cook 10 minutes or until tender.
     
  7. Remove steaks to platter.
     
  8. Pour off all but 3 tablespoons of the pan fat.
     
  9. Blend 2 tablespoons flour, 1/2 teaspoon salt, and 1/8 teaspoon pepper into fat.
     
  10. Stir in 1 1/2 cups milk. Continue cooking and stirring until all gravy thickens and bubbles, 1 minute. If gravy is too thick add more milk. 
     
  11. Return meat to the pan with gravy and spoon gravy over meat.
