Chicken Fried Minute Steak

Inexpensive cuts of beef make this dish affordable. Great ingredients make it delicious. If you haven't tried country fried steak, this Chicken Fried Minute Steak is a great introduction.

Ingredients

  • 1 pound minute or round steak
  • 1 egg, beaten
  • 3/4 cup bread crumbs
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 tablespoon oil
  • 2 tablespoon flour
  • 1 cup broth or milk

Instructions

  1. Pound steaks until 1/4 inch thick.
     
  2. Dip steaks in egg and then in bread crumbs mixed with salt and pepper.
     
  3. Heat oil in heavy skillet over medium to low heat.
     
  4. Brown steaks 8 to 10 minutes on each side.
     
  5. Place steaks on a warm platter. Keep hot.
     
  6. Stir flour into pan drippings. Stir over medium heat until lightly browned.
     
  7. With a whisk, stir in broth or milk. Cook until it thickens into a gravy.
     
  8. Add water if necessary, to thin. Add salt and pepper to taste.
     
  9. May return steaks to pan and simmer until ready to serve or serve sauce separately.
