Viennese Sweet Semolina

Ingredients

  • 2 ounce sultanas
  • 1 pint milk
  • 1 1/2 ounce butter
  • 3 ounce semolina
  • 4 Tbsp caster sugar

Instructions

Serves 4 - 6. Preheat the oven to 350 F. Soak the sultanas in warm water. Put the milk into a saucepan with butter. Heat till warm, then pour in the semolina and bring to boil, stirring constantly. Simmer for 5 minutes, then stir in all but 1 Tbsp of the sugar. Drain sultanas and mix into semolina. Turn into a greased ovenproof dish and smooth top. Bake for 30 minutes. Remove dish from oven and increase heat to 400 F. Mix the semolina with a fork to break it up. Return dish to oven for 5 minutes till mixture is dry and crisp. Turn on to a warmed serving dish. Sprinkle with the reserved sugar and serve hot.
