Yummy Congo Bars

Ingredients

  • 1 1/2 cup all-purpose flour
  • 1 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 9 tablespoon (1/2 cup plus 1 tablespoon) unsalted butter, room temperature
  • 1 3/4 cup lightly packed brown sugar
  • 1 1/4 teaspoon vanilla
  • 2 eggs, room temperature
  • 1 cup chocolate chips
  • 1/2 cup chopped walnuts or pecans

Instructions

  1. Preheat oven to 350 degrees F.
     
  2. Mix dry ingredients together in small bowl.
     
  3. Cream butter, sugar, and vanilla until fluffy, about 2 minutes using an electric mixer on medium.
     
  4. Add the eggs and mix until completely combined. Mix in the flour mixture until almost combined.
     
  5. Add chips and nuts and finish by hand (try not to overmix or the bars will be tough).
     
  6. Spread in a greased 13x9-inch pan.
     
  7. Bake at 350 degrees F for 30 minutes until the top crust is golden brown and the middle has dropped below the level of the outer crust. You can't test these with a tester because they stay gooey inside.
     
  8. Cool for 30 minutes in the pan before cutting.
