Frosted Peanut Butter Bars

Chocolate and peanut butter bars are about as comforting as you can get...and these Frosted Peanut Butter Bars are no exception. These peanut butter cookie bars are frosted and glazed with chocolate. It will be hard to eat just one!

Ingredients

  • 1/2 cup peanut butter
  • 1/3 cup shortening
  • 1 1/2 cup packed brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cup all-purpose flour
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup milk
  • 2/3 cup creamy peanut butter
  • 1/2 cup shortening
  • 4 cup confectioners' sugar
  • 1/3 to 1/2 cup milk
  • 1/4 cup semisweet chocolate chips
  • 1 teaspoon shortening

Instructions

COOKIES:

  1. Preheat oven to 350 degrees F.
     
  2. In a mixing bowl, cream peanut butter, shortening and brown sugar. Beat in eggs and vanilla.
     
  3. In another bowl, combine the flour, baking powder and salt; gradually add to creamed mixture. Add milk; mix well.
     
  4. Transfer to a greased 15-inch x 10-inch x 1-inch baking pan. Bake until a toothpick inserted near the center comes out clean. Let cool completely.
     

FROSTING:

  1. In a mixing bowl, cream peanut butter, shortening and confectioners' sugar.
     
  2. Gradually beat in enough milk to achieve spreading consistency. Frost bars.
     

GLAZE:

  1. Melt chocolate chips and shortening in a double boiler; stir until smooth. Drizzle over frosting. Refrigerate.
