Ingredients

  • 1/2 cup butter or margarine, at room temperature
  • 1 cup sugar
  • 1 whole egg + 1 egg yolk
  • 1 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoon milk
  • 1/2 teaspoon vanilla extract
  • 1 egg white, beaten until foamy
  • 1 cup firmly packed brown sugar
  • 2/3 cup flaked dried coconut

Instructions

  1. Preheat oven to 350 degrees F.
     
  2. In a bowl and using an electric mixer, cream together butter, sugar and whole egg and egg yolk.
     
  3. In another bowl or on a piece of waxed paper, mix together flour, baking powder, and salt.
     
  4. Add flour mixture, milk and vanilla to butter mixture and mix well.
     
  5. Spread batter in an oiled 8-inch square pan or baking dish. Batter will be thick.
     
  6. To make meringue, in a small bowl stir together egg white, brown sugar, coconut and vanilla. Spread mixture evenly over batter.
     
  7. Bake until golden on top and toothpick inserted in center comes out clean, about 30-35 minutes.
     
  8. Cool on wire rack, then cut into bars to serve.
