Best Chicken Chow Mein

Ingredients

  • 1 large boneless skinless chicken breasts, cubed
  • 32 ounce chicken broth
  • 16 ounce frozen stir fry vegetables
  • 12 ounce chow mien noodles
  • 1/4 cup soy sauce
  • 2 teaspoon red pepper flakes
  • 1 teaspoon ground ginger
  • 1 tablespoon corn starch
  • 1 tablespoon cold water
  • 4 green onions, chopped
  • 2 tablespoon olive oil

Instructions

  1. Preheat wok on medium high heat. Add olive oil, green onions, chicken, ginger, soy sauce, and red pepper flakes. Continue cooking until chicken is no longer pink (approx. 15 minutes).

  2. Reduce heat to medium, add chicken broth, cover and simmer for 10 minutes. In a small cup, combine corn starch and cold water - stir until well blended. Remove cover and add corn starch mixture. Continue simmering, uncovered, until sauce thickens (approx. 5 minutes).

  3. Serve over chow mien noodles or steamed white rice. Enjoy!
