Teriyaki Chicken Stir Fry

Stir fry recipes are great when you need a fast weeknight meal that will please the appetite. Teriyaki Chicken Stir Fry is a sweet and salty dish that the family will love. Chicken is mixed with a homemade sauce made from pineapple juice and brown sugar, and is placed on a bed of white rice. Tangy and delicious, add in your favorite vegetable to make it the way you like. Make dinner in a jiffy with this great Asian dish.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 8 ounce pineapple juice
  • 3/4 soy sauce
  • 2/3 cup granulated sugar
  • 2/3 brown sugar
  • 3 to 4 cloves of garlic
  • 2 tablespoon cornstarch
  • 1 tablespoon water
  • 2 tablespoon olive oil
  • 2 cup frozen stir fry vegetables
  • dash of dry white cooking wine

Instructions

  1. Coat a large wok with olive oil over medium heat.

  2. Cube chicken breasts - add to wok and allow to cook, stirring frequently, for 5-7 minutes.

  3. Add garlic, pineapple juice, soy sauce, sugars and wine; mix well. Cover and allow to simmer for 15 minutes.

  4. Remove lid and add vegetables - cover and allow to simmer for an additional 5 minutes.

  5. Combine cornstarch and water in a small bowl; mix well. Add to wok and stir until thickened. Serve stir fry over steamed white rice.
