Scallion Pancakes

Ingredients

  • 4 cup flour
  • 2 cup water
  • 1 Tbsp.salt
  • 4 Tbsp. shortening
  • 1 cup chopped scallions

Instructions

In mixing bowl put in flour and add water. Knead til smooth. roll out flat and rectangular 5"x 21". Spread Crisco all over surface. Sprinkle salt and scallions. Roll up like cinnamon roll along the long end. Cut into 3" hunks. Grease hands. Fold the dough hunks in half 4 - 5 times. Roll out flat about 8-9 inches. Fry in an oiled hot skillet, flip and fry other side until crispy. You can put other things on the dough instead of salt and scallions. Such as cinnamon sugar. or sugar and applesauce. Anything that can be rolled flat.
