Lahp ("good Luck Salad")

Ingredients

  • 2 cup chicken stock
  • 1 pound ground pork
  • 1 large yellow onion chopped
  • 2 large shallots chopped
  • 4 stalks scallion chopped
  • 1/4 cup (to 1/2 c) cilantro chopped
  • 2 limes juiced
  • 4 tablespoon fish sauce
  • 4 tablespoon rice powder (see below)
  • 2 tablespoon red pepper flakes
  • 1 teaspoon sugar
  • 1/4 head cabbage shredded
  • 6 green beans

Instructions

Boil stock and add pork. Cook meat thoroughly, tossing it to break it up evenly. Drain pork, mix with chopped onion, shallot, scallions, cilantro, lime juice, fish sauce, rice powder, pepper flakes, and sugar. Mix thoroughly - adjust seasonings to give a good balance of sour, salty, and hot. Shred 1/4 head of cabbage and arrange on a plate. Spread salad on top of cabbage bead. Trim beans and cut into 1-2 inch lengths. Garnish salad. Rice powder is made by dry-frying uncooked rice grains in a pan until they are golden brown. Grind with a mortar and pestle (or clean coffee grinder) until it is a fine sand-like powder.
