Hot and Spicy Noodles

Ingredients

  • 1 pound Chinese/Japanese noodles, cooked and drained
  • 1 teaspoon sesame seeds
  • 2 tablespoon rice vinegar
  • 2 tablespoon soy sauce, low sodium
  • 2 cloves garlic, chopped
  • 1 tablespoon sesame oil
  • 1 tablespoon Szechuan chili oil
  • 1 teaspoon sugar
  • 1/2 teaspoon ginger (optional)
  • 3 tablespoon peanut butter
  • 4 tablespoon scallion, chopped

Instructions

In frying pan, lightly brown sesame seeds, about 4 minutes. Remove from heat. Add to frying pan all remaining ingredients except noodles. Place frying pan over low heat enough to melt peanut butter and blend ingredients. Mix sauce in with cold, rinsed noodles. Top with 4 tablespoons chopped scallions. Refrigerate. Eat cold.
