Fantastic Cheater's Pho

Ingredients

  • 4 quart water
  • 5-6 beef boullion cubes
  • 2 tbsp ginger powder
  • 3 tbsp garlic powder or 6 cloves, diced
  • 1 tbsp onion salt
  • 1 tbsp dried basil
  • 1 tbsp cinnamon
  • 1 tbsp black pepper
  • 1 tbsp coriander
  • 1/4 cup fish sauce
  • 7 star anise
  • 2 tbsp chili oil
  • 1 tbsp dried lemongrass (optional)
  • 2-3 lbs steak, sliced very thin
  • 1 pkg (6.75 oz) thin maifun rice sticks
  • 1 bunch fresh green onions, sliced very thin
  • 1 red onion, halved and sliced
  • 1 bunch fresh basil
  • 1/2 pound fresh bean sprouts
  • 2-3 fresh jalapeno peppers, sliced very thin
  • 1 bunch fresh cilantro
  • Sriracha hot chili sauce
  • Plum sauce

Instructions

Assemble bean sprouts, fresh basil, fresh cilantro, 1/4 sliced red onion, 1/2 quantity sliced green onion, and sliced jalapeno peppers on large platter, to put in center of table. Cover and refrigerate. Bringing water to a boil in 5-6 qt stockpot, add boullion, ginger, garlic, onion salt, dried basil, cinnamon, black pepper, coriander, fish sauce, star anise, chili oil, lemongrass, 3/4 sliced red onion, 1/2 quantity green onion. While broth is melding, chop raw steak very VERY thin. When broth has boiled for 15 minutes, bring to a rolling boil. Place (sliced) raw meat into bottom of large pho bowls. Pour (boiling) broth over meat. Serve immediately, garnish with vegetables, add sriracha and plum sauce to taste.
