Chinese Sesame Noodles

If you're looking for an easy, yummy meal to make tonight, the Chinese Sesame Noodles are for you! This meal has a great fusion of flavors and is super easy to make.

Ingredients

  • 8 ounce thin egg noodles, linguine or thin Chinese egg noodles
  • 1/4 cup peanut oil, divided
  • 1/4 cup light soy sauce
  • 1/4 cup red wine vinegar
  • 2 1/2 tablespoon peanut butter
  • 1 teaspoon sugar
  • 1 teaspoon Oriental sesame oil
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 3 tablespoon sesame seeds
  • 2 tablespoon garlic, minced
  • 1/2 teaspoon crushed red pepper flakes
  • 2 green onions, sliced
  • chopped peanuts (optional)
  • minced fresh cilantro (optional)

Instructions

  1. Cook noodles al dente. Rinse, drain and toss with 2 tablespoons oil.
     
  2. Mix soy, vinegar, peanut butter, sugar, sesame oil, ginger and salt in deep jar or bowl.
     
  3. Whisk until smooth.
     
  4. Toast sesame seeds in large skillet until light brown and fragrant. Remove seeds. In same skillet, heat 2 tablespoons oil over medium heat.
     
  5. Add garlic and pepper flakes; cook and stir until garlic starts to color.
     
  6. Add noodles and soy mixture. Toss to mix. Cook just until heated through, about 2 minutes.
     
  7. Cool to room temperature. Sprinkle with sesame seeds and green onions and optional garnishes.
