Spinach and feta are baked inside a phyllo pastry to create a lite, flavorful bite-sized treat in this wonderful recipe, coming from our friend Victoria from Easy Recipes with a Twist. Treat your family and guest to appetizer recipes and make it a party.

Ingredients

  • 1 pint phyllo pastry
  • 1/3 cup extra virgin olive oil
  • 12 1/3 ounce frozen chopped spinach package, defrosted and drained
  • 1 cup Feta cheese, cubed
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 375 degrees F.

  2. Take muffin tray and oil 12 cups (oil cups and the space in between the cups).

  3. Oil 3 phyllo sheets. Phyllo pastry is really delicate but forgiving medium; if it breaks just continue layering.

  4. Oil 3 filo sheets. Filo pastry is really delicate but forgiving medium; if it breaks just continue layering.

  5. In a bowl mix spinach, feta cheese and black pepper. Fill pastry with the filling.

  6. Oil two filo sheets and cover pie bites and secure the edges by folding them down.

  7. Pop to preheated oven for 15 minutes or until the pastry is crisp and golden.

  8. Remove from the oven, flip the pie bites and cut them to individual pies.

  9. Serve with beautiful Greek salad and enjoy!
