Ingredients

  • 1 stick butter
  • 2 tablespoon olive oil
  • 2 cup yellow onion, diced
  • 2 tablespoon all-purpose flour
  • 1 cup broth
  • 1 cup heavy cream
  • 1 cup sour cream
  • 1 cup parmesan, grated
  • 12 ounce baby spinach
  • 1 teaspoon cayenne pepper

Instruction

  1. Sauté chopped onions and minced garlic over medium heat for 5 minutes until tender.

  2. Whisk in flour and cook for a minute. Slowly pour in broth and whipping cream into the mixture and whisk until the mixture begins to boil and thicken. Reduce the heat to a low simmer.

  3. Add the fresh baby spinach to the cheese sauce. It's going to be very bulky at first. Cover the skillet with a lid and simmer for 3 minutes or until the spinach has wilted.

  4. Remove the skillet from the stove and stir in sour cream and a dash of cayenne pepper. Season to taste with salt.
